Wild Orange Cupcakes

Do you need a taste of sunshine? If so, these cupcakes are just what you need!
Cupcake Ingredients:
1 1/2 cup flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 TBSP vinegar
5 TBSP oil
2 tsp vanilla
1 cup water
3 drops Orange essential oil
Instructions:
1. Preheat oven to 350°F
2. Combine dry ingredients in a glass or metal* mixing bowl and mix thoroughly
3. Mix wet ingredients except for the essential oils in a separate bowl and stir to combine.
4. Add wet ingredients to dry ingredients and mix until you get a smooth batter. Do not beat (can use Kitchen Aid mixer on 2 lowest speeds).
5. Add Orange essential oil and mix well.
6. Pour into paper lined cupcake molds (any size) filling each to 3/4 fullness.
7. Bake in oven until tooth pick comes out clean (about 12-15 min. for mini cupcakes, 20 minutes for regular cupcakes, and longer for large cupcakes).
Frosting Ingredients:
4 oz cream cheese
2 TBSP butter
1 cup Powdered Sugar (or more for desired consistency)
3 drops Orange essential oil
Frosting Instructions:
Beat ingredients together in a glass or metal bowl with metal beaters* adding more powdered sugar as necessary to obtain desired consistency/thickness. Frost cupcakes once cooled.
Eat and savor a taste of sunshine and happiness!
*Glass or metal bowls and utensils (silicone is also acceptable) are required when using essential oils since essential oils can break down plastics.
Note: I only recommend using certified pure essential oils.
